Daily Activity #512 (english)
Today is my 4th day of practice this week. Today, my team and I prepared pie crusts, croissants and Sour Bread. For Sour Bread and croissants, I prepared them yesterday, we only laminated and folded croissants, and then for sour bread we only made and baked them.
Starting from morning when I come. I pulled out the croissant mixture and I laminated the croissant fat and I immediately folded it in a double fold and then I rested for 30 minutes. For Sour Bread I gave diki to do it because I focused on making croissants. After I rest my croissants, I will fold again with a single fold and rest for 30 minutes and then print. After I print I proofing and then I bake for 25 minutes.
For the last product, I will make a pie crust after all the croissants are finished. I made 3 pies of various sizes, small, medium and large. After that, we do general cleaning and go home.
